This Chickpea Mason Jar Salad is packed with filling plant protein and a creamy roasted garlic hummus dressing.

- Lettuce
- Kale
- ½ cup Zucchini
- ½ cup Shredded Carrots
- ½  cup Roma Tomatoes
- ½ cup Broccoli 
- 1 cup Cooked Chickpeas
- Creamy Roasted Garlic Hummus Dressing recipe from my e-book "From Chickpeas, With Love" *if needed, adjust the salt in the recipe to suit your salad"
- Start by pouring in your desired amount of dressing to the bottom of each mason jar. Then add in your cooked chickpeas, so that they marinate in the dressing. 
- Divide your salad components evenly amongst your jar. Layer in your greens and veggies in the following order - zucchini, broccoli, shredded carrots, roma tomatoes, kale, and lettuce. 
- You can store your salad in the fridge until you are ready to eat or you can eat immediately. 
- To serve, just hold the mason jar upside down and dump the salad out onto your serving dish. ENJOY…
