Garlic Red Bell Pepper Fried Rice (8 ingredients)

This is an easy throw together and quick 8 ingredient fried rice recipe. You can substitute the red bell peppers with green or yellow bell peppers. Whatever you have on hand will work. This is a great recipe to use up those extra veggies.

Ingredients
  

  • 1 medium to large clove of garlic
  • 1 small carrot - grated
  • Organic virgin coconut oil
  • 1 red bell pepper
  • 1 green onion
  • Cooked Brown Rice
  • Sea Salt
  • Cayenne Pepper Powder

Instructions
 

  • Chop garlic and green onions. Set aside.
  • In a hot frying pan add in coconut oil. Add in chopped garlic and green onion. Fry until garlic is golden brown but not burnt.
  • Add in grated carrots, rice, and a pinch of sea salt if needed. Cook until rice is warm and crispy.
  • Add in chopped red bell pepper and take off stove.
  • Mix in a light sprinkle of cayenne pepper powder if desired.
  • Serve and enjoy while warm. Enjoy.

Notes

If you do not use a non-stick pan for cooking like me, keep stirring your rice to prevent excessive sticking.
