These Rosemary Garlic Smashed Potatoes are crispy, flavorful, and the perfect addition to any meal.

- 1 ½ pounds of Yukon Gold Potatoes
Marinade
- ⅛ cup of coconut oil
- 1 clove of grated Garlic
- Sprig of Rosemary
- Pinch of Curry Powder
- Pinch of Cayenne Pepper
- Nutritional Yeast
- Sea Salt
- 1 Garlic Leaf Shoot
Pre-heat your oven to 400 degrees F.
Boil potatoes in pot of salted water for 20 minutes. Drain and set aside to cool.
In a small bowl, prepare your marinade by combining all your ingredients and setting aside.
Place your boiled potatoes on a baking pan lined with parchment paper and smashed with a bottom of a small bowl or a glass cup. Brush each smashed potatoe generously with your marinade, flip and brush the other side.
Bake in oven for 15-18 minutes until the skin is crispy. Serve hot.
