Tomato Garlic Asparagus

- 1 ½ bunches Fresh Green Aspargus
- 1 large clove of garlic
- 1 roma Tomato
- 1 Green Onion
- Coconut Oil
- Sea Salt
- Curry Powder
Start by washing all your fresh ingredients and setting to the side.
Prep your asparagus by removing the hard fibrous bottoms of each stalk. My tip is to gently tap your knife from the bottom of the stalk going upward until the knife cuts though.
In a shallow pan, warm a few tablespoons of coconut oil and sauté your garlic, green onions, and curry powder. Add in your diced tomatoes.
Let your tomatoes cook for 2-3 minutes, your tomatoes should start to break down.
Add in your asparagus and season with sea salt.
Let your asparagus steam for 5-7 minutes, until tender. Taste and adjust your seasoning.
