Creamy Avocado Pasta with Tahini and Green Onions

Ingredients
  

  • 228 grams Rotini Pasta (about a half of a box of Rotini)
  • 1 Whole Ripe Hass Avocado pitted and peeled
  • ½ cup Olive Oil
  • 1 tbsp Tahini
  • Squeeze of Fresh Lemon Juice
  • 2 Chopped Green Onions leave a little for garnish
  • Fresh basil leaves 4-5 leaves
  • Few tops of Parsley
  • ½ tsp Sea Salt
  • 1 tbsp Nutrional Yeast
  • ¼ tsp Cayenne Pepper
  • ¼ cup Water (add more if needed)

Instructions
 

  • In a blender, combine avocado, green onions, tahini, lemon juice, olive oil, parsley, and sea salt. Blend until smooth.
  • Cook your pasta according to package instructions. (reserve pasta water. SEE NOTES)
  • In a bowl, pour in your avocado sauce. Stir in nutritional yeast and cayenne pepper.
  • Add in cooked pasta and toss with sauce until well combined.
  • Garnish with chopped green onions if desired.
