Rotini Pasta
(about a half of a box of Rotini)

Whole Ripe Hass Avocado
pitted and peeled
½
cup
Olive Oil
1
tbsp
Tahini
Squeeze of Fresh Lemon Juice

Chopped Green Onions
leave a little for garnish
Fresh basil leaves
4-5 leaves
Few tops of Parsley

Sea Salt

Nutrional Yeast

Cayenne Pepper

Water
(add more if needed)
Instructions
In a blender, combine avocado, green onions, tahini, lemon juice, olive oil, parsley, and sea salt. Blend until smooth.
Cook your pasta according to package instructions. (reserve pasta water. SEE NOTES)
In a bowl, pour in your avocado sauce. Stir in nutritional yeast and cayenne pepper.
Add in cooked pasta and toss with sauce until well combined.
Garnish with chopped green onions if desired.
