This recipe I published in September right after summer officially ended when you could still find some fresh corn and tomatoes at local farmer`s markets. This recipe literally brings the freshness and brightness of summer to your plate. Give this recipe a try if you want something different, fresh, and creative for your next meal.
Marinated Zucchini (3-Ingredients)
This is one of my simplest, easy-to-make, yet delicious recipes from my blog. A quick marinade of sea salt and coconut oil gives zucchini a delicious flavor while maintaining the fresh crunch from garden fresh zucchini. I published this recipe in the height of summer when fresh zucchini was in abundance. This is great way to use fresh or store-bought zucchini. You can eat this as a side salad of sorts if you wish, I know that I just eat as is.

Summer Cherry Tomato Sandwich
This is another simple, quick, and easy recipe that you can whip up in a few minutes. You can also just serve the cherry tomatoes without the bread as a side. I came up with this recipe when we had an insane harvest of fresh red cherry tomatoes from our trees.

Try my all-time favorite recipe from this round-up. Made with just a few simple ingredients but packed with so much fiber and protein and of course that peanut buttery goodness.
Garlic Red Bell Pepper Fried Rice
Looking for a way to use up some leftover brown rice from the fridge? This is a good way to do so. The use of fresh red bell peppers adds some freshness to this fried rice and of course, I cannot have fried rice without garlic.
Brown Sesame Seed Tahini
This healthier version of tahini uses brown sesame seeds as opposed to the traditional white-hulled sesame seeds. Brown un-hulled sesame seeds contain more calcium and iron than white-hulled sesame seeds. To make this tahini you only need three ingredients and a blender or a food processor.
