This is my NUMBER #1 juice to cool me down on a hot summer day.
Welcome to the first post in my brand new Power-Aid series where I show you how to make drinks that power and aid the body. Today we start with a cool and insanely refreshing Beet and Ginger Juice.
This juice is a great way to use up those fresh beets from your local farmer`s market and or old and wrinkly beets you had have on your counter for a few days.
Growing upon the island of St.Croix, this juice was more than welcome on those hot summer days.
This beet and ginger juice tastes the best when served ice cold. There is nothing better for me on a scorching, muggy, hot summer day than a glass of fresh ice-cold beet and ginger juice. I can literally feel my entire body cooling down with each sip. You are going to want to try this recipe.

Beets and Ginger Juice – (Power-aid Series)
Ingredients
- 10 cup Water
- ⅔ – 1 cup Panela
- 5 Small Beets (peeled and cubed)
- 2 knobs Fresh Ginger (unpeeled and chopped small)
Instructions
- In a blender, add in 5 cups of water, half of the chopped beets, and half of the chopped ginger. Blender for 1-2 minutes until you have a fine pulp.
- Pour into a large bowl and repeat step 1 with the remaining ingredients.
- Let the unstrained liquid sit for 7 minutes.
- Strain liquid twice through a fine kitchen strainer to another bowl.
- Return half of the liquid to the blender and blend with the Panela.
- Mix in the sweetened liquid with the other half of the liquid. Taste for sweetness and adjust as needed.
- Pour the finished beets and ginger juice into a large bottle. I used a 32-ounce glass wide-mouth mason jar.
- Store in the fridge. Best served chilled. ENJOY.

Beets are a deep red/purple taproot of the beet plants. Beets grow underground, much like carrots and potatoes. The stems and leaves are both edible, you can chop them up and cook them like collard greens or kale. Beets can be eaten raw, steamed/boiled, roasted, and blended in juice.

Beets are super rich in Folate, Copper, and Manganese. Folate is a vital vitamin that supports growth and development.
Beets contain nitrates, that lower blood pressure levels. Beets are a great source of iron, which benefits women during their monthly cycle.
What is Ginger?
Ginger itself comes from the root of the ginger plant. Ginger is used as a spice and herb in various cultures.
How does Ginger help the body?
Ginger has anti-inflammatory and antioxidant properties. To ease nausea and stomach discomfort, ginger is a good root to use in tea. Ginger is also good for lowering blood sugar levels.
