If you love desserts that can double in the morning for breakfast, then this recipe is for you. These Cranberry Oat Crumble Bars are super filling and very easy to make.
Thick slices of oat bars are covered with a deliciously tart homemade Cranberry Cinnamon Jam. In addition, to being absolutely delicious these make a great breakfast meal prep option.
These Cranberry Oat Crumble Bars are sturdy enough for on-the-go eating on hectic days when making breakfast is too much. Make a pan of these at the beginning of the week and have them at the ready for the week. You can individually portion them out, store in the fridge, and reheat them in the toasted oven on busy mornings.
You can make these family-friendly by using your or the little one’s favorite jam for the filling. Any and every flavor of jam can work with this recipe. This recipe uses my 4-ingredient Cranberry Cinnamon Jam. Let me know in the comments your favorite jam flavor?
I know I said that this is a dessert recipe. You do not have to turn over your kitchen or your local grocery store to find the ingredients to make these. Honestly you need less than 10 ingredients – including water and sea salt, 9 to be exact for this recipe. 🙂

What you will need:
Rolled Oats
Whole Spelt Flour
Cinnamon Powder
Sea Salt
Baking Powder
Cranberry Cinnamon Jam
Coconut Oil
Panela
Water

Crush up your parchment paper so that it fit into your pan easily.
Blind Baking: the process of partially or fully baking a pie crust before the filling is added. We want to do this step to ensure that our crumble bars are not soft and soggy.
Cranberry Oat Crumble Bars
Ingredients
Dry Ingredients
- 2 cup Rolled Oats
- 1 cup Whole Spelt Flour
- ½ tsp Cinnamon Powder
- ½ tsp Baking Powder
- Pinch of Grated Nutmeg
Wet Ingredients
- ¼ cup Coconut Oil
- ⅛ cup Water
- ¼ + ⅛ cup Panela
Filling
- ½ cup Cranberry Cinnamon Jam heaping
Instructions
- Preheat oven to 325℉.
- In a bowl, combine all DRY ingredients and stir together well. Set aside.
- In a blender, combine all your WET ingredients. Blend until you have a smooth liquid.
- Pour your WET mixture into your bowl with your DRY ingredients. Mix well and set aside ½ of the crumble mixture.
- Line a loaf pan with parchment paper and press remaining crumble mixture. Make sure to evenly press out the crumble mixture until you have a solid bar shape.
- Bake in oven for 30 minutes.
- Remove from the oven after 30 minutes and spread out a heaping ½ cup of Cranberry Cinnamon Jam evenly.
- Top with the reserved ½ cup of crumble mixture. Press in slightly and return to the oven for 15 minutes.
- After 15 minutes, lift the bar out the pan and cut into 8 even pieces.
