This is hardly a recipe but this is what I have been loving to eat lately. This is how I have been eating up all the homegrown cherry tomatoes that we have been harvesting lately and receiving from relatives. Today I will share with you my “recipe” for my Summer Cherry Tomato Sandwich. You are not only getting a recipe but also some health benefits of tomatoes. This is not just a recipe, trust me.
It seems that this is the peak time for homegrown tomatoes, so there is a lot in the house right now. This simple sandwich just captures the summer freshness and brightness of these cherry tomatoes. You can add in fresh herbs like parsley, green onions, or basil. You can even eat the tomatoes as a side dish.
Lately, I have been eating toasted bread with coconut oil and sea salt. This combination just tastes so good to me, especially when the bread is warm, mhhhh. This is like my bread and butter.
Now let us get into some of the health benefits of tomatoes. This is much more than just a simple sandwich.
Tomatoes are high in Vitamin C, do not worry if you do not have oranges or a glass of orange juice this morning. Just grab a bite of this sandwich or eat a few cherry tomatoes. A single tomato provides about 40% of the daily requirement of Vitamin C.
Tomatoes contain a carotenoid and antioxidant called lycopene that can fight cancer by damaging free radicals.

Summer Cherry Tomato Sandwich
Ingredients
- Cherry Tomatoes
- Coconut Oil
- Sea Salt
- Cayenne Pepper
- Sandwhich Bread
Instructions
- Spread some coconut oil on each side of your bread and sprinkle a little bit of sea salt.
- You can mix this in a small bowl. Cut each cherry tomato in two or four peices. Sprinkle in some sea salt and cayenne pepper.
- Mix in some coconut oil. Serve on top of your bread.
