Tostones – Twice-fried Green Plantains

Tostones are twice-fried green plantain sprinkled with sea salt. This crispy, tropical, salty side dish is found in Caribbean and Latin American cuisines. Today, I am going to show you how to make it.

TOSTONES ON A WOODEN CUTTING BOARD ON GRASS

For this recipe, you will need green plantains. You can find green plantains at your local supermarket or grocery store. I usually get mine from my local Mexican and Asian Grocery Stores.

Ingredients
  

  • 2 Green Plantains
  • Coconut Oil
  • Sea Salt

Instructions
 

  • Begin by rubbing your hands with coconut oil and removing the skin from the green plantains. (see video)
  • Cut both peeled green plantains into 23 pieces.
  • Heat your coconut oil in a frying pan on medium. You can fill your pan with enough coconut oil to cover half of your cut green plantains.
    I set my stove to number 5.
  • Carefully add in your cut green plantains one by one.
  • Fry until golden brown on one side. Flip and fry until the other side is golden brown as well.
  • Remove from the pan onto a plate covered with paper towels or a brown bag.
  • Repeat until you have fried all your green plantain slices. Once done, remove your frying pan from the heat.
  • Place your fried green plantain slices on your cutting board. Using the flat side a glass cup, smash all your fried plantains until they are flattened out, but not too thin or they will fall apart.
  • Reheat your frying pan. Add more oil if necessary to cover your tostones.
  • Carefully add in your smashed green plantains and fry until golden brown and crispy.
  • Flip and fry until the other side is golden brown as well. Remove from the pan onto a plate covered with paper towels or a brown bag and sprinkle with sea salt.
