During the summer you can find Zucchini in abundance, especially at local farmer`s markets. Where I live, we are now in the height of the summer season and it is easy to find an abundance of fresh vegetables. I thought that it would be a good idea to post a simple, delicious, and unique recipe using this versatile summer vegetable. This is a quick Marinated Zucchini recipe.

This is honestly my favorite way to eat zucchini, just combining 3 ingredients I created something so simple but utterly so delicious. Somehow by just using coconut oil and sea salt the humble zucchini somehow becomes something more than it is. I am sure when you try this recipe you will be pleasantly surprised as well.
I enjoy eating my marinated zucchini in sandwiches. In the first and second pictures, I place my marinated zucchini slices on half of a homemade spelt bun (yes, I bake my own bread using exclusively spelt flour) with cashew spread, avocado, fritters, and of course a healthy sprinkle of cayenne pepper to boost the circulation. In the third picture, I kept it simple with just the marinated zucchini and fried fritter in between a spelt bun.

Marinated Zucchini
Ingredients
- Whole Zucchini
- Sea Salt
- Organic Virgin Coconut Oil
Instructions
- Start by washing your zucchini and slicing into thin round slices with a knife.
- In a bowl combine sliced zucchini, sea salt to taste, and a healthy drizzle of coconut oil. Mix well.
- This step is optional but you can let the zucchini marinate for a few minutes if you prefer. I perfer to eat right away to mantain that crisp crunch,
