
This Tomato Garlic Asparagus is the perfect side dish that pairs beautifully with your main dish and comes together in a flash. You only need a handful of ingredients and 10-15 minutes to whip this up.
Let`s quickly go over the ingredient list for this recipe:
Fresh Green Asparagus – You can find these in the produce section of your supermarket, select the bright green stalks that are firm to the touch and not bendy. For this recipe I used a bunch and half of asparagus. You can easily double or triple the recipe to accommodate the number of people you are serving.
Garlic – garlic and asparagus are a such a classic flavor combo. I use one clove of fresh garlic, if you like more garlic you can use two cloves.
Curry Powder – curry powder is a staple in most of my recipes. It adds layers and depth of flavor without the effort.
Tomato – The tomato in this recipe gives the required moisture so the asparagus can steam without adding water.
Green Onions – another one of my staple seasonings here.
Coconut Oil – a few tablespoons of coconut oil sautés the seasoning and tomatoes while adding that lovely coconut flavor and healthy fats.
Sea Salt – you may notice that I have no set measurement for salt in this recipe. Just adjust to your needs and taste.

Tomato Garlic Asparagus
Ingredients
- 1 ½ bunches Fresh Green Aspargus
- 1 large clove of garlic
- 1 roma Tomato
- 1 Green Onion
- Coconut Oil
- Sea Salt
- Curry Powder
Instructions
- Start by washing all your fresh ingredients and setting to the side.
- Prep your asparagus by removing the hard fibrous bottoms of each stalk. My tip is to gently tap your knife from the bottom of the stalk going upward until the knife cuts though.
- In a shallow pan, warm a few tablespoons of coconut oil and sauté your garlic, green onions, and curry powder. Add in your diced tomatoes.
- Let your tomatoes cook for 2-3 minutes, your tomatoes should start to break down.
- Add in your asparagus and season with sea salt.
- Let your asparagus steam for 5-7 minutes, until tender. Taste and adjust your seasoning.

Here I served my Tomato Garlic Asparagus with Coconut Milk Mashed Potatoes and Chickpea and Red Bean Burgers in a homemade Tomato Basil Sauce.
I also had a half of avocado to go along with this meal but I took the picture before I remembered that I had a whole bag of ripe avocadoes on the counter.
