This is my favorite simple and quick fried rice recipe. I came up with this recipe one sunny evening while grabbing a container of leftover Brown rice from the fridge. You only need 8 ingredients to make this fried rice, which most ingredients you might already have in your fridge.
Garlic is a must-have in my fried rice. I cannot make fried rice without adding in a clove….or two. The recipe also uses grated carrots for brightness and red peppers for a hint of sweetness. The red pepper I used in this recipe was fresh from my local farmer’s market. This red pepper was the sweetest I have ever tasted. I preserved the sweetness by adding the chopped red pepper last and taking the pot right off the stove and onto my plate. This keeps the crunch and freshness to the fresh bell pepper, in addition to the Vitamin C found in bell pepper. Yes, oranges are not the only source of Vitamin C.
You can see some of my mom’s garden in the background of the picture above. The evening sunlight really gave this picture that “glow”.

Garlic Red Bell Pepper Fried Rice (8 ingredients)
Ingredients
- 1 medium to large clove of garlic
- 1 small carrot – grated
- Organic virgin coconut oil
- 1 red bell pepper
- 1 green onion
- Cooked Brown Rice
- Sea Salt
- Cayenne Pepper Powder
Instructions
- Chop garlic and green onions. Set aside.
- In a hot frying pan add in coconut oil. Add in chopped garlic and green onion. Fry until garlic is golden brown but not burnt.
- Add in grated carrots, rice, and a pinch of sea salt if needed. Cook until rice is warm and crispy.
- Add in chopped red bell pepper and take off stove.
- Mix in a light sprinkle of cayenne pepper powder if desired.
- Serve and enjoy while warm. Enjoy.
Notes
Add in as much or as little veggies as you prefer. You can really go to town with all the possible possibilities. This is why I am excited to see what veggies and flavors you add to this fried rice recipe.
