Peanut Oatmeal with Medjool Dates (protein rich breakfast)

I am sharing one of my favorite breakfast foods with you today – Oatmeal. Now this is not just any oatmeal. This is oatmeal made with homemade Peanut Milk and topped with chopped dates. This recipe is also a family favorite, we eat this for breakfast 2 or 3 times a week. It is that and very simple and quick to make.

Roasted peanut milk elevates the humble oatmeal to a whole different level. Chopped medjool dates on top adds sweetness to every bite. This is my #1 breakfast staple.

When I was younger, I used to dislike oatmeal. Now I don`t mind eating oatmeal for breakfast 2 or more times a week. I prefer my oatmeal not cooked and still “crunchy” so I just add in my oats and take the pot of the stove. 

This is easy to make, especially if you make the roasted peanut milk in advance. You can substitute the dates for your favorite dried fruit or you can even use fresh fruit if you like eating your fruits with your oatmeal.

Ingredients
  

  • 3 cups Roasted Peanut Milk
  • 3 cups Water
  • 1 Cinnamon Stick
  • 3 small slices of fresh ginger
  • Grated Nutmeg
  • Evaporated Cane Juice
  • Medjool Dates
  • Rolled Oats

Equipment

  • Small Pot
  • Knife/Cutting Board
  • Kitchen Scissors
  • Wooden Spoon
  • Small Handheld Grater

Method
 

  1. Bring water, cinnamon stick, and ginger slices to a rolling boil for about 3-4 minutes.
  2. Add in roasted peanut milk and bring back to a low simmer.
  3. Add in rolled oats to your desired consistency.
  4. If you like your oatmeal thick, add in more oats, or if you prefer your oatmeal more thin add in less. I add about 1 ½ cups of cups.
  5. Cook to your desired texture.
  6. if you like your oatmeal still “crunchy” like me, cook for a short time. I add in my oats and turn off the stove.
    If you like your oatmeal more “soft” cook for a longer time.
  7. Spoon your finished oatmeal into your bowl. Use scissors to cut the dates into small pieces and sprinkle on top.

The health benefits are impressive for such a tiny grain. You know the saying “Good things comes in small packages”. The fiber from the oats and the protein from the peanut milk makes this a very fulling breakfast.
