That is why I recommended three portions the most but if you are like me and my Mom, we just split this recipe right down the middle. Half for me and half for Mom.

Creamy Avocado Pasta with Tahini and Green Onions
Ingredients
- 228 grams Rotini Pasta (about a half of a box of Rotini)
- 1 Whole Ripe Hass Avocado pitted and peeled
- ½ cup Olive Oil
- 1 tbsp Tahini
- Squeeze of Fresh Lemon Juice
- 2 Chopped Green Onions leave a little for garnish
- Fresh basil leaves 4-5 leaves
- Few tops of Parsley
- ½ tsp Sea Salt
- 1 tbsp Nutrional Yeast
- ¼ tsp Cayenne Pepper
- ¼ cup Water (add more if needed)
Instructions
- In a blender, combine avocado, green onions, tahini, lemon juice, olive oil, parsley, and sea salt. Blend until smooth.
- Cook your pasta according to package instructions. (reserve pasta water. SEE NOTES)
- In a bowl, pour in your avocado sauce. Stir in nutritional yeast and cayenne pepper.
- Add in cooked pasta and toss with sauce until well combined.
- Garnish with chopped green onions if desired.
