7 Summer Recipes to Try This Month

Summer is the perfect time to enjoy fresh and vibrant produce and take advantage of the in season. Here are seven delicious plant-based recipes to inspire your menu this month. All these recipes are made with whole-foods, plant-based, and soy-free.

1. Peach Sorbet

Peaches the one fruit that literally screams summer with its bright yellow/orange exterior. You only need 3 ingredients to make this sorbet. Seriously.

Tip: Once you have stored this sorbet overnight in the freezer, leave out for a few minutes prior to serving.

2. No-Churn Blueberry Banana Ice Cream

In need for a quick ice cream recipe without the effort of pulling an ice churn. This is the perfect no-churn ice cream recipe, packed with fresh in-season blueberries.

Tip: Feel free to swap our blueberries for other fruits.

3. Zucchini & Tomato Sauté

Fresh zucchini and juicy tomatoes are the stars of this easy and quick stir-fry. Summertime where I live means an abundance of fresh local vegetables. Zucchini is one of the vegetables that I can find at almost every local farmer’s market.

Tip: This is great along Millet or Sweet Plantain Rice.

4. Mint Melody Iced Tea

Nothing screams “cool me down” than a nice, refreshing glass of iced tea. If you know, you know.

Tip: Pour these in popsicle molds and freeze overnight for healthy ice pops.

5. Chickpea Mason Jar

Hot summer days are not meant to be spent standing over a hot stove. This chickpea mason jar is packed with protein and fresh veggies.

Tip: Swap out the veggies for whatever is local and fresh from your local farmer`s market.

6. Raw Cabbage Slaw

This cabbage slaw is perfect as a side dish, on top of veggie burgers, or added into a salad.

Tip: Make this Lentil Carrot Burger and place into a bun slandered with hummus or cashew spread, with lettuce, a slice of tomato, fried plantains, and this slaw on top. YUM!!!

7. Papaya Lime Juice

Talk about a classic tropical flavor combo! Papaya and lime screams summer in the summer, make two gallons while you are at it because it will go fast.

Tip: You can add in more limes if you like a more limey tang to your juice.
