Zucchini & Tomato Sauté

Summertime where I live means an abundance of fresh local vegetables. Zucchini is one of the vegetables that I can find at almost every local farmer’s market. Most of the farmers in my area are closed for the season. This recipe is great if you have any leftover zucchini.

Me and my family strongly believe in not wasting food. This recipe for us is a great way to use zucchini that are going old, turning yellow, and packed with seeds, so if you have any of those hanging around your kitchen this recipe is a great fit.

For this recipe, I used a huge zucchini that was turning yellow. I peeled off the skin as it was slightly tough and removed the seeds. This is great for using up any old zucchini that you will not be eating raw. The brightness of the recipe literally captures the golden days of summer.

    Summer Zucchini & Tomato Saute

    Ingredients
      

    • 1 Whole Zucchini
    • 1 Large Tomato
    • Sea Salt
    • Coconut Oil
    • Celery
    • 1 Green Onion
    • Turmeric Powder
    • Curry Powder
    • 1 Clove of Garlic

    Instructions
     

    • Wash and cut zucchini into small chunks.
    • In a saute or frying pan coated with coconut oil, stir in chopped garlic, celery, green onion, turmeric powder and curry powder.
    • Cube tomato and add in. Cook for a 1 -2 minutes.
    • Add in chopped zucchini and salt to taste. The cooking time varies depending on the size of your zucchini chunks. Cook until tender but not mushy.
    • Serve and enjoy 🙂
