This rich and creamy avocado pasta is a flour-free spin on my Avocado Pasta with fresh noodles made from zucchini.
This recipe uses less than 10 ingredients and required no cook-time. A perfect quick lunch or dinner for when you don`t feel like turning on the stove.
You will need a vegetable spiralizer to make these zucchini noodles. A spiralizer uses a blade and spiral motion to create vegetable noodles from vegetable like zucchini and carrots.
There are some very fancy spiralizers out there, but I have a very simple hand-held vegetable spiralizer that makes “thick” and “thin” strands of vegetable noodles.
What are Zucchini Noodles?
Zucchini Noodles aka “zoodles” are spiralized fresh zucchini. The spiralized zucchini makes a noodle shape that looks like light green pasta. This is a creative and fun way to eat zucchini.
This recipe is great to have on hand especially when you have some delicious in season zucchini from your local farmer`s market. We are using a slightly modified version of the creamy avocado tahini sauce from my 5-star “Avocado Pasta with Tahini and Green Onions” recipe.
Important note: This dish is best served immediately as the salt in the avocado sauce will start to breakdown and release the water in the zucchini if left too long.
Honestly, on the first test of this recipe, I left the zucchini noodles in the avocado sauce from about 45 minutes and to my great surprise and astonishment the zucchini was still crunchy (I think the cold weather then had something to do with that).
The bottom line is that this recipe tastes the best when served immediately.
Zucchini Noodles with a Avocado and Tahini Sauce
Ingredients
- 2 Large Zucchini
- 1 Hass Avocado
- 2 Green Onions
- Fresh parsley (a few leaves) optional
- ¼ cup Olive oil
- ½ cup water
- Sea Salt to taste you can start with a ½ teaspoon
- ¼ tsp cayenne pepper
Instructions
- Spiralize your zucchini and set aside.
- Add all the ingredients except the zucchini noodles in the blender and blend until smooth. Add in more water if needed.
- Pour over the zucchini noodles and mix in well. Adjust sea salt if needed.
- Serve immediately.
The fresh green onions, a few sprigs of parsley, and a light squeeze of lemon juice gives the dish a freshness that is the perfect compliment to the richness of the avocado and tahini.
